Sophie’s Carrot and Beet Soup

Hello,

Couple days ago, a morning wind tinted with the smells of a premature fall waked me up. It awaken the desire for a warm, comfort, soup.  I’ve also got tired to see that 1 lb bag of carrot sitting in my fridge. Another week, and I am almost certain that they were going to be a root invasion or that they will come alive and take quarter in there. Yep. Well, to go back on the main subject, I like my soup full of flavors and I always add tons of herbs. And by September soups are in every week menu. It takes a moment to cut all those vegetables, but it is so worthy.   And you can put practically any vegetables that you want. Once I tried beets, apple, leeks, potato and cauliflower and it was delicious! Another way to use those fresh September apples.
