Veggies Fiesta: Vegetarian Shepherd Pie

Christmas is all about family and asking for the cooking books you’ve been craving for but been pushing them on the side in the list of priority. Is also the moment of surprise when you dare tell you mom that she can look for a book in the same style than what you were asking for. As I asked my mom that I wanted a book with generic recipes and she offered me : GoodHousekeeping: Budget Dinners. Quick & Easy Everyday Recipes. Impressive cooking book with good, quick & easy to do recipes. They also have a section reserved for vegetarian meals. As my parents now do, I tried for a bit to do Monday without meat and do once per week a vegetarian meal. But after a while looking at the pitiful look in my husband face, I reduced to twice or four time a month. What do you want, we are meat lovers! I could have choose many recipes from that book, but within the framework of this week theme, I decided to present their vegetarian version of shepherd pie. The main ingredients are lentil and sweet potatoes. The first time I tried the recipe I had no expectations at all, but it turns out to be ”wow” good. We must have take a least 2 portions each and enjoy it until the last bite.
